Homemade Additive and Preservative-Free Meats (Part 1: Sausage)


A couple years ago, as I was trying to cut extra calories out of our diet, I came up with a great idea. Why not mix my own sausage with ground turkey? I quickly realized that this would not only cut calories, but also all of the preservatives and additives and extra salt that sausage often contains. I priced ground turkey and found that Costco had the best price per pound by far and , of course, it came in large quantities so I would not have to mix up more sausage very often. I then searched the internet for a homemade breakfast sausage recipe. I wasn't sure how well the turkey would do in place of pork, but it is really yummy! My family heartily approved of the new sausage and wehave been making it ever since.

So recently I had been pondering making some Italian sausage as well, not sure why it took me so long to think of doing Italian too, but never the less I started looking for recipes the other day and found tons of them and so I went ahead and tried one. I will update with the results and, if it was good, the recipe! ( ;
Next hunting season, we will be trying our hands at grinding and stuffing our own sausage. I will make sure to keep you up on how it goes.
